At the bar, or at home.
You have four choices. Most guests go for the omakase, but ordering yourself works just as well. Or take a box home.

Omakase
Fifteen courses, Kenji decides.
You sit at the bar and Kenji chooses. Fifteen courses: small dishes first, then nigiri from light to rich, and finally miso and tamago. He places each piece in front of you himself, at the moment the rice is just right.
Omakase means: I leave it to you. So you don’t choose, but you do tell us what you don’t like or can’t eat. Kenji adapts the menu and keeps track of what each guest has had.
Eat a piece of nigiri as soon as it is in front of you. The rice is still at body temperature and falls apart in your mouth. Fingers are fine, chopsticks too. The soy is already on, so no need to dip.

À la carte
Your own choice, piece by piece.
Rather choose yourself? At the bar and at the small table by the window you can order nigiri in pairs, sashimi, maki and a few hot dishes from the kitchen behind the bar.
À la carte is available at both sittings, at the bar and at the table for four by the window. You order in rounds: start with a few pieces, then see if you are still hungry. If a fish isn’t at its best today, Kenji will tell you.

Sake and tea
A different glass with each part.

For the omakase, Loes picks five sakes, from dry and ricey to unfiltered and soft. No alcohol? Then she pours five Japanese teas, brewed hot and cold.
With the pairing you get five small glasses, one with each part of the evening. Loes tells you which region the sake comes from and why it suits that fish. You can always order an extra glass.

Takeaway
A box for home.
Order a box before 15:00 and collect it between 17:00 and 17:45, before the bar opens. Made by Coen and Kenji, with the same rice and fish as at the bar.
Sushi is at its best within an hour. So ideally eat it as soon as you get home and don’t put it in the fridge: the rice goes hard. Soy, ginger and fresh wasabi are included.
