At five we light the candles and the marble tables get busier. The menu has the classics that belong in a big room like this: steak with pepper sauce, Dutch beef stew, a schnitzel and the fish of the day. Jolien and her kitchen make everything themselves, chips and bitterballen included.

Chapter three · Practical

Before you come

Book: Recommended for dinner, especially at weekends. Online for up to eight people.
Groups: From eight people we push tables into one long row. From twenty you go to the Waagzaal.
Children: Welcome. There is a kids' menu, high chairs and a drawer full of colouring sheets.
Allergies: Let the staff know. The chef knows exactly what goes into every dish.
