Chapter one · How it works

Uitsmijters, croques and fresh soup, with the morning paper.

Main room of a brown grand café in an old weigh house: high beamed ceilings, brass chandeliers, dark oak panelling, marble tables with Persian rugs and a long bar, warm evening light

At nine the heavy door swings open and the coffee machine is already running. You take a paper from the reading table and sit down by the window. Breakfast until half past eleven, then lunch until five: uitsmijters, croques, croquettes on bread and a fresh soup every day. No need to book, you can always walk in.
